The Classic Tonkotsu
$19Our 18-hour pork-bone broth, thick and milky. Chashu, soft egg, spring onion, a sheet of nori.
A small room off the main road. One broth, simmered all day. Bowls that fog up the windows when the city goes quiet.
The Broth
There is no shortcut and we stopped looking for one. Bones go in cold, the pot comes up slow, and it holds a low rolling simmer all afternoon until it turns thick and pale and tastes of everything.
